Baked Parmesan Tilapia

We eat a lot of tilapia. This is one of out favorite ways to eat it.

SERVES 6 -8 (change servings and units)

Ingredients

    Spray baking pan(s) with nonstick cooking spray.
  2. 2
    Preheat oven to 400.
  3. 3
    Place beaten eggs in a shallow dish. Stir in mayo and lemon juice. Stir until well-combined.

    In a separate shallow dish, stir together breadcrumbs, parmesan cheese, and the herbs/spices. Mix well.
  5. 5
    Dip each fillet into the egg/mayo/lemon juice mixture (coat both sides). Let excess drip off, then dip into breadcrumb/cheese mixture to coat both sides.

    Place coated fillets in prepared baking pan(s). Bake, uncovered at 400 for 20-30 minutes or until fish is white and flaky inside.

    Wonderful baked tilapia, lovey crunch on the outside while the inside was perfectly cooked and moist. Lovely combination of herbs, I will be making this one often, thanks for posting. July 28/09, made again, we really love this coating on the tilapia, delicious!

    i only had 12 ounces of tilapia so, i only made half of the recipe.this was such a great recipe, you could taste each different spice and herb without one overpowering the others.the recipe stated to bake at 20 to 30 minutes,but i checked it after 10 it was perfectly done. i served this with corn and fried zucchini. it was such a grear recipe,i will make this again.thank you for posting.

    I wish there was a 4 1/2 choice for this recipe. We all enjoyed this, but it could use a bit more lemon juice in the wash. Overall this was a very good choice and will be repeated in the future.
