An Excellent recipe - and VERY forgiving. I followed the basic recipe, but added some extras. I didn't measure these extras, only eyeballed it, so the amounts below are approximates:
1/3 cup of ground flax seed
1/2 cup bran buds
1/3 cup craisins
2 heaping teaspoons of cinnamon
I couldn't find my 1/2 cup measuring cup, so measured 2/3 cup - NOT packed- brown sugar.
Didn't measure the applesauce, just scooped it out of the jar with a spoon, so I estimate I used about 3/4 of a cup.
Also I substituted buttermilk instead of regular milk.
I didn't leave it sit overnight, instead mixed it - following the directions
...... and baked it immediately.
Had it that evening with vanilla yogurt topping for dessert. My Husband loved it - said I spoiled things for him by telling him it was healthy!
I took it for a snack to work, and was asked for the recipe by a couple of co-workers.
I told them that I thought you can probably add whatever you desire; fresh chunked apples, raisins, nuts, etc. An EXCELLENT RECIPE!

Excellent. I'm picky about oatmeal consistency, and this was not mushy at all and almost cake-like, which I just loved. I refrigerated for two days due to poor planning on my part, and it still baked up great. I did take a few liberties and added about 1 tsp cinnamon, a dash of nutmeg and a cup of diced apples. The smell while it was baking made me think of apple pie. This is so versatile and something I'll definitely make again.

If you love oatmeal, this is for you! Fantastic! We loved this fresh out of the oven and it made for a delicious, easy, warm-it-up-before you go breakfast on subsequent mornings after we originally made this. We have topped it with leftover blueberry sauce, sugar free maple syrup, and vanilla yogurt and all tasted fabulous. We did substitute splenda for the sugar and it worked beautifully. Thanks for a real keeper!
