Baked Oatmeal

I mix this together, cover it and refrigerate overnight, then bake it in the morning. Every time I serve this, when I have guests, they always ask for the recipe. Feel free to add whatever you would add to your regular oatmeal. I sometimes add nuts, raisins or blueberries. Add what you like and I hope you enjoy it!

    Preheat oven to 325 degrees F.

    In a large bowl combine the oatmeal, baking powder and salt.

    Mix in milk, eggs, applesauce, brown sugar.

    Pour into a greased casserole dish.

    Bake at 325 for 45 minutes.

    Serve hot, topping each with vanilla yogurt.

    SOOOO good! I made some modifications based on preference and what I had on hand. I used vanilla rice milk instead of cow's milk (allergy); organic apple blackberry sauce; a teaspoon of cinnamon; 2 teaspoons of organic maple syrup; and only 1/3 cup of brown sugar. It tasted very much like a spicy oatmeal cookie. :yummy: I didn't bother with the yogurt topping. IF there are any leftovers, I think I may try topping this with some fresh fruit. What a wonderful breakfast, snack or dessert! Thanks for sharing the recipe! EDITED TO ADD: I just made this again in a new way, and it was just as wonderful. This time I made it using rice milk, unsweetened raspberry/cranberry applesauce, and the full 1/2 cup of brown sugar, then added walnuts, 1/3 cup ground flaxseed, and 1/2 cup fresh cranberries. *Fantastic!* It reminded me of a cranberry muffin in flavor, but soooo much more healthful!

    Excellent. I'm picky about oatmeal consistency, and this was not mushy at all and almost cake-like, which I just loved. I refrigerated for two days due to poor planning on my part, and it still baked up great. I did take a few liberties and added about 1 tsp cinnamon, a dash of nutmeg and a cup of diced apples. The smell while it was baking made me think of apple pie. This is so versatile and something I'll definitely make again.

    If you love oatmeal, this is for you! Fantastic! We loved this fresh out of the oven and it made for a delicious, easy, warm-it-up-before you go breakfast on subsequent mornings after we originally made this. We have topped it with leftover blueberry sauce, sugar free maple syrup, and vanilla yogurt and all tasted fabulous. We did substitute splenda for the sugar and it worked beautifully. Thanks for a real keeper!
