Baked Ham Glazed With Pineapple and Chipotle Peppers

Sweet, Smokey and Spicy! Go ahead and leave the seeds in if you enjoy the heat.

SERVES 8 (change servings and units)

Ingredients

Directions

    Mix cornstarch with a little cold water to dissolve.
  2. 2
    Place all ingredients except for ham in a blender and blend smooth, in a small saucepan over medium heat bring to a boil them simmer till thickened.

    Preheat oven to 375 ° F.
  4. 4
    Place ham, cut end down, in a large baking pan and score skin.
  5. 5
    Bake ham for 15 minutes.
  6. 6
    Brush glaze over ham and bake for another hour or until internal temperature reads 140 °F.

    Baste half way through baking.

I love this! I've made it a few times and always get rave reviews. The leftovers are really good (not that there's ever much left).

    I screwed mine up and it was still yummy! I used a spiral ham that I got on sale and was very confused about cooking time/temp (this recipe vs. ham direction card). I went with this recipes cook time/temp. but then stepped out of the house for "a few minutes" which turned to 1.5 hours--so my ham burned a little and my glaze didn't get to cook very long onto the ham. STILL...it was yummy! I kept sneaking bites as I was cutting up the ham to put away after our meal. I will definitely try again and see if it possibly can improve. It was plenty good as was! THANKS!

    Made Feb. 08, 2008. I doubled sauce recipe because only had 20 oz. can of Pineapple. Froze the rest for later use. Used 4 seeded peppers making it alittle spicy hot. Next time I'll keep seeds in 1 pepper. Double recipe almost fills blender container. Would be good on pork, chicken, shrimp & BBQ too. Great Stuff!!!!!

    OMG this is absolutely wonderful. The sauce on this ham is unbelievable. I used 3 chipotle chile with the seeds and it just had a fantastic flavor. I would recommend basting the ham about every 15 minutes or so and serving the sauce as a diping sauce. Great stuff. Thanks Rita for a great 5+ star recipe.
