Baked German Potato Salad

This recipe was given to me by a German lady that I worked with some time ago, it's a nice change from the usual potato salad recipe

SERVES 8 -10 (change servings and units)

Ingredients

Directions

  1. 1
    Set oven to 350 degrees F.
  2. 2
    Butter a 3-quart baking dish.
  3. 3
    Fry bacon; drain drippings from skillet reserving 1/4 cup.
  4. 4
    Add celery, onions, salt and flour.
  5. 5
    Simmer, stirring constantly.
  6. 6
    Add sugar, vinegar, pepper and water.
  7. 7
    Bring to a boil.
  8. 8
    Toss bacon and potatoes together in the baking dish.
  9. 9
    Pour celery mixture over top.
  10. 10
    Cover and bake for 30 minutes.

We had "german" potluck night at our Wednesday night Bible study. This salad was just scrumptious! You could even stir in some kielbasa slices if you wanted. Another great recipe Kittencal Thanks!

    This was delicious! We kinda messed up and forgot to cook the potatoes so we left it in the oven alot longer...it cooked fine but got a little bit dried out. Still delicious! I think next time I make it (apart from pre-cooking the potatoes!) the only thing I'll change is to cut the potatoes into cubes instead of slices but that's just personal preference. Thanks for the good recipe!!

    Kitten I've never had potato salad this way before, it is just excellant. A lovely blending of flavours, and potatoes that melt in your mouth. I liked how easy it was to make, I prepared it in the morning and baked it at dinner time. It was absolutely delish. Thank you so much for sharing.

    OH MY GOD this is wonderful!!!!!!!! Thank you KittenCal. I do have a couple of changes, one I used red potatos, and boiled them first. They are a little mushy, so next time, I am just going to add them raw. Also, because I like a crispy top, I didn't cover and had to bake about an hour and quarter to achive the top I wanted. For vineger, I used half red wine and half cidar vinegers. Served along with green bean and corn salad, grilled beef tenderloin and fresh fruit for desert. WHAT A KEEPER
