Baked Fish Fillets

This is a wonderful alternative to fried fish, coating the fish with butter and baking at high heat is the secret to the success of this recipe --- use meaty fillets of fish for this if possible --- FOR LOW-FAT OPTION; whisk together 2 egg whites with 2 tablespoon cold water, dip the fish into the mixture, allow excess to drip off, use in place of melted butter.

SERVES 4 -6 (change servings and units)

    Set oven to 500° F (bottom oven rack).

    Grease a shallow baking dish (enough to hold all fish without overcrowding).

    In a shallow bowl, combine first 7 ingredients.

    Brush fish fillets with melted butter, then dip into crumb mixture.

    Place in a greased baking pan.

    Bake uncovered at 500°F for 10 minutes, or until fish flakes easily with a fork.

    This was really quick and easy, which is a plus! But it had a little too much "bread crumb" taste for me...I am more of a "mix of cornmeal and flour with seasoning type" of fish coating person. Maybe this just didn't appeal to me because it is so different from what I am used to with fish...I am used to a lighter texture on fish if I "fry" it, and usually grill it. But I loved how quick and easy this was. Thanks for posting! Made for Zaar Stars Tag game.

    Such an easy recipe and the fish turned out golden and moist. I used sole. I cut the recipe back to two servings, mixed up the whole batch of crumbs cause I know I'll do these ssoon again Thanks KITTENCAL for a keeper

    As usual this is a fantastic recipe.. I used season salt also.. fish was nice and brown plus crispy,, this will be made often, thanks again kitten
