Baked Eggs on Tortillas

My husband heard this on TV years ago, we tried it and we all loved it!! Watch them closely to keep the tortilla from getting too brown and crunchy. Cook time is approximate. Servings according to what you need

SERVES 2 -4 (change servings and units)

    Depending on size of tortilla used, break 1-2 eggs into center of tortilla.
  2. 2
    Salt and pepper egg (s) Sprinkle Cheddar all around outer edge of tortilla.

    Bake at 350 until egg is set as desired.

How fun! We put Turkey bacon, guacamole, sour cream, cilantro, and salsa on ours and ate it like a taco. It was awesome!!!! We cut up the turkey bacon right out of the package and it cooked on top right along with the egg. So easy! Thanks for a great weekend breakfast! UPDATE: 1/31/09 We have used this recipe often. I submitted another photo, this time using leftover Nacho fixings including taco meat. We love that you can put anything on these eggs and they come out so yummy! Thanks again for a great recipe.

    This was a nice weekend treat for dessert that I am sure to make again. I do think that it needs a little more than just salt and pepper and cheddar and will try some turkey bacon and cilantro next time as well. I used a jalepeno corn tortilla and it added a nice hint of spice to the recipe. Thanks for posting!

    As soon as I saw the yummy looking picture on the Aussie Recipe Swap, I knew I had to make this today! It was so easy and incredibly tasty, that I knew it would be a regular weekend breakfast. I added co-jack cheese and real bacon bits, but I know that mushrooms, peppers, onions and anything else you'd put in an omelette would be great too. I baked mine for 11 minutes in a convection oven and it was the pefect soft-boiled type egg consistency. Thanks for sharing Earnhardt!

    This is fantastic!! I will make it again and again. It is delicious. It's generally difficult to satisfy my craving for crunch--with eggs. But this is 100% satisfying. I did add (already cooked) torn bacon sprinkled over the eggs and toward the end, added minced chives and parsley. Terrific.
