Baked Chicken Fajitas

This is easy and healthy.

SERVES 6 , 12 fajitas (change servings and units)

Ingredients

Directions

    In a 13x9x2-inch baking dish coated with nonstick cooking spray, combine the chicken, tomatoes, onion and peppers.
  2. 2
    Combine the oil, chili powder, cumin and salt. Drizzle over chicken mixture, toss to coat.
  3. 3
    Bake, uncovered, at 400°F for 20-25 minutes or until chicken is no longer pink and vegetables are tender.

    Spoon onto tortillas; fold in sides.

I made these last night for a dinner party and they were pretty tasty. The oven baking allowed me to concentrate on other dishes that I needed to complete. The only change I would make would next time is to add some lemon or lime juice to the oil that is drizzled before baking.

    These were very tasty. I enjoyed the ease of making them. The flavors blended well together. Overall a nice fajita recipe. I cut it in half and it worked perfectly. Thanks for posting.

    Wonderful and so easy to make. I love that it goes in the oven as roasting the veggies bring out their natural sweetness. The only thing I'd do different next time would be to spread out the veggies more. I used large veggies and needed more room. So 2 baking sheets next time with some veggies with chicken on one and rest on the other sheet making sure veggies have plenty of room. Made for *1-2-3 Hit Wonders* game 2007

    Yum, yum, yum! I took Charlotte's advice and used 2 cookie sheets so that the chicken and veggies could be spread out more. The aroma as these were cooking was wonderful and we really loved these healthy roasted fajitas!
