Baked Cheesy Chicken Nuggets (No Bread Coating)

This recipe is for the ever-popular chicken nugget. It uses polenta and finely grated parmesan cheese as the crumb mixture. Should serve 6 children or 4 adults. These are great nuggets and they are gluten free! Feel free to add some spices or seasonings of your choice.

SERVES 4 -6 (change servings and units)

    Preheat oven to 200°C.

    Flatten the chicken slightly until it is the desired thickness of your nuggets--you can use a meat mallet or your rolling pin.

    Cut the chicken into nugget sized chunks.
  4. 4
    Combine the polenta and the parmesan in a bowl.
  5. 5
    Dip the chicken pieces into the polenta mixture and ensure they are thoroughly coated.

    Place the nuggets onto a paper lined baking tray and bake for 10 minutes, or until cooked and golden.

Yummy! These were really easy to make, and very versatile (depending on what extra seasonings you use). A very healthy way to make chicken nuggets. And gluten free, too! I think I might have scared my downstairs neighbors when I was pounding the chicken with a rolling pin. But that's not enough to stop me from making these again!

    Very good- I did have to leave them in longer than listed and I added spices to give flavor but overall it made a great meal!

    This was a huge success in our house and DS aged 22 has nearly eaten the lot with rocket and sweet chili sauce for dinner and now taken it in a baguette for lunch at uni and he is hard to please !!! I dumped the whole lot in a plastic bag, shook it round and then got out the chicken tenderloins one by one and put them on the oven tray - so so so easy !! thankyou **Jubes**
