Baked Cheese Omelet

Easy Denver type omelet that is BAKED in the oven- no flipping! So you can continue getting ready or enjoy some coffee and the paper instead of slaving over the stove! Found on The Scandinavian Society of Nova Scotia website and altered to my taste.

SERVES 4 (change servings and units)

    Preheat oven to 400°F
  2. 2
    Beat eggs, water, and salt together.
  3. 3
    Melt the butter in a heavy ovenproof pan and then add the onions, ham and bell pepper. Sauté for 3 minutes.
  4. 4
    Pour the egg mixture over the onion, red pepper and ham mixture and then sprinkle with the cheese cubes.

    Bake in the oven for 15 to 20 minutes. When the egg is set and the cheese has melted, the omelet is done.
  6. 6
    Garnish with parsley- if desired- and serve.

This is really, really good. I omitted the ham (only because I didn't have any) and it was still wonderful. I look forward to making this with ham, bacon, sausage, etc. and trying different veggies and cheeses. Thanks for a fabulous and versatile one-dish meal.

    Quick, easy and delicious! I used a medium cheddar, an orange pepper and omitted the ham. I needed something fast for dinner and this fit the bill wonderfully. It would be good with mushrooms, too. Thanks for posting.

    We really enjoyed this for brunch today. I used 2 tbsp cream instead of the water, and cut the ham back to about 3/4 cup and used about 3/4 cup shredded cheddar cheese. With these reduced quantities of add-ins it was ready after about 12 minutes in the oven, and served two of us. Very good, quick, and very easy.

    A great, hot breakfast or brunch. I especially liked this because I am horrible at flipping omelletes! I used skim milk in place of the water. I topped it with swiss cheese. We loved it and I'll make this again....thanx!
