Baja Chipotle Fish Tacos

Marinated cod, cabbage, and zesty white sauce lend authentic Baja flavors to these easy to make tacos. This recipe was posted by a popular seasoning company and adapted from a cooking websites newsletter. Included in the 2006 Zaar World Tour - Mexico.

SERVES 6 (change servings and units)

    Place fish in a large baking dish or resealable plastic bag, pour 3/4 cup Lawry's Baja (r) Chipotle Marinade with Lime Juice over the fish.
  2. 2
    Marinate in refrigerator about 30 minutes in covered dish or sealed plastic bag.
  3. 3
    Remove fish from dish or bag and discard marinade.
  4. 4
    Grill or broil fish and baste with 1/4 cup Baja Chipotle Marinade. Turn fish once and cook until fish flakes easily with a fork.

    While fish is cooking, combine mayonnaise, sour cream, and remaining 2-4 tablespoons of marinade in a small bowl.

    To serve place fish in tortillas, using two tortillas for each taco, top with shredded cabbage and drizzle with sauce.

The three of us liked this a lot and will definitely serve again. I could not find the Lawry product so bought one envelope of a Durkee chipotle marinade and added 1 teaspoon of lime juice to the marinade. I broiled the fish about 4 minutes per side. DS thought we should have added tomato and cheese, and next time will do so. I see that the NF do not include the marinade nor tortillas so wonder what the fat and sodium levels are? Made for Everyday is a Holiday. Thanks Lauralie41 for posting a keeper.

    We absolutely loved these fish tacos. I appreciated the fact that they weren't deep-fried and full of fat! The Lawry's marinade is very tasty and flavors the fish well. I LOVED the sauce combination of flavors, using just 2 T. of the marinade. We used flour tortillas and pacakaged coleslaw mix. This is an easy, fast, healthy and delicious meal...on the table in minutes. I broiled my fish approx. 4 min. per side.

    I absolutely loved the sauce made from the marinade, mayonnaise and sour cream. I can see using this in a number of ways. The corn tortillas, however, tasted kind of raw after being only warmed up. I think they need to be fried or perhaps flour tortillas need to be used. I used two per taco, but the tacos still fell apart when we ate them. Maybe the pre-fried and -shaped, hard, corn tortilla shells would be better. Or perhaps I had substandard tortillas? Broiling can take from 4 - 12 minutes depending on the thickness of your fish. My cod fillets were done in a brief 4!

    These were so good! I couldn't get the Lawry brand marinade, but the marinade I could get turned out good. I added red onions, tomatoes and cilantro to the mayo/sour cream mix. I made them once as tacos and then I made them again, except I added extra cabbage, tore the tortillas into strips and made extra of the mayo/sour cream mix and made a salad out of them. I think I like them even better that way!
