Bacon and Onion Potato Casserole

A friend invited me to a collaborative dinner and said my task was to bring a cool potato dish. This one fit the bill and was easy to transport!

SERVES 8 -10 (change servings and units)

Ingredients

Directions

    Peel and boil potatoes.
  2. 2
    While potatoes cook, cook bacon until well done and crisp.
  3. 3
    Drain and crumble bacon, set aside.
  4. 4
    Dice onion and carmelize in melted butter, set aside.
  5. 5
    When potatoes test done, drain and mash.
  6. 6
    Stir in heavy cream and whip.
  7. 7
    Season with salt and pepper to taste.
  8. 8
    Fold in onions, bacon and parmesan cheese.
  9. 9
    Add additional cream if you prefer softer potatoes.
  10. 10
    Turn into a greased casserole dish.

    Bake for 30 minutes in a preheated 350 degree oven.

    Sprinkle with additional parmesan before serving.
