Bacon Cheeseburger Potato Pie

My husband and father-in-law love this! It's a bit time-consuming, but worth the spectacular results. Truly a handsome dish! From one of those Pillsbury mini-magazine things you buy at the supermarket. Please note that you can use leftover mashed potatoes as well, or make homemade if you really hate instant!

SERVES 6 (change servings and units)

Ingredients

    Heat oven to 375 degrees F.
  2. 2
    Combine ground beef, breadcrumbs, onion, ketchup, mustard and salt and mix well.

    Press hamburger mixture in bottom and up sides of an ungreased 9 inch pie pan to cover completely.

    Bake in preheated oven for 15 minutes.
  5. 5
    While meat mixture is baking, cook bacon until crisp.
  6. 6
    Drain on paper towel, cool, and crumble.
  7. 7
    Discard bacon drippings or save for another recipe.

    In a medium sauce pan, combine water, margarine and garlic salt.

    Bring to a boil.
  10. 10
    Remove from heat and add milk.

    With a fork, stir in potato flakes.

    Then stir in 1/2 cup of cheddar cheese.

    Remove partially baked"crust" from oven, pour off any fat.

    Spoon potato mixture into crust evenly.

    Return to oven for another 10-15 minutes or until meat is thoroughly cooked, and potatoes are heated through.

    Remove pie from oven.

    Top with tomato, remaining cheese and crumbled bacon.

    Return to oven, and bake for 5 minutes longer, until cheese is melted.

    Remove from oven, top with green onions.

    Let stand 10 minutes before serving.

This was super easy to put together and the kids and I loved it. Kind of a cross between meatloaf and shepherd's pie. I'll be making it often. Thanks for posting!

    Very creative & tasty recipe. I don't usually cook with instant potatoes but I was in a time crunch. I made an error to prep of the potatoes, I made them to the box instructions & realized too late there were adjustments. The end result was still ok. I found the dish abit salty so I'll used garlic powder vs salt next time. This dish needs more attention to put together than I originally thought. Its a great looking dish with lots of flavour though, thanks for sharing.

    If this was up to my DS's this would be more than a 5*, certainly kid friendly, and they were so glad to be eating something w/o surprises in it. **sigh**, poor children. I did bake 10 min. longer the first time in the oven, meat was still very red, only browned on the crust. I didn't add anything extra to this and it was a sucess. When mixing the ground beef I did mix it in a zipper food storage baggie to ease in cleanup. Great Recipe Amanda!

    This was very yummy and liked by the family. The recipe reads like it's a lot of work, but in reality it is very quick. Next time I will make it with real mashed potatoes and more bacon!
