Bacon Cheddar Rolled Omelet

From The Brickhouse Inn Bed and Breakfast Gettysburg, Pennsylvania. Good, fun way to make an omelet. Obviously, you can play with ingredients from ham, sausage, potatoes, etc.

SERVES 4 (change servings and units)

    Preheat oven to 350 degrees.

    Generously grease foil with cooking spray.
  3. 3
    Place foil in bottom of 13x9-inch baking dish.
  4. 4
    Whisk together flour, milk, butter and eggs until smooth.
  5. 5
    Pour carefully into prepared pan.
  6. 6
    Sprinkle with bacon.
  7. 7
    Bake until eggs are set 15 to 18 minutes.

    Remove from oven and immediately sprinkle with cheese.
  9. 9
    Starting at narrow end of pan and using foil to lift roll the omelet. Wrap with foil and return to warm oven for a few minutes. when ready to serve slice into 1 or 1 1/2 inch slices.

This was real easy to make, and it was good, but something I think was missing. The DS enjoyed it, and so did one of my kids, so we got a split decision here. Will make again .

    Mixed reviews here, too. I loved the concept (I like Japanese rolled omelets, too) and this was so easy to roll. I loved the speed at which this cooked, and the fact that I didn't have to babysit it. But then I tasted it. DH and Roommate thought it was "okay", DD loved it. I thought it was kind of rubbery tasting. I don't know. I might play around with with ingredients . . . It has such potential! I wish I liked it more.

    Pretty good, need lots black pepper, I use half and half cream in place of milk to the egg mixture to create a softer omelet and also added in some green onions, thanks lazyme!...Kitten

    This was a nice change for us, however it lacked flavor and the eggs were a little tough. I used peppered bacon, a mix of Mexican cheeses and added salt and pepper, but it still lacked something. Maybe some chopped green onion next time.
