This little sandwich will make you want to slap somebody...probably me! I should have shared this little darling a long time ago. It's not my recipe but my dear friend, Babs. The combination of pepper jack cheese and black beans with purple onion on rye is about all one could ask for in a quick fix that tastes utterly divine.

SERVES 4 , 4 sandwiches (change servings and units)

Ingredients

    Sandwich prep:.
  2. 2
    Heat griddle or other skillet to medium heat.
  3. 3
    Lightly spread butter or margarine on all 8 slices of bread, one side only.
  4. 4
    Place black beans on several layers of paper towels and pat them dry.
  5. 5
    Cut pepper jack cheese into medium-thick slices as you would for a grilled cheese sandwich. You will need enough slices to make your required number of sandwiches.

    Have your chopped onions handy.

    To build your sandwich:.

    Make grilled cheese sandwich as you normally would -- but add black beans and purple onions in with the cheese.

    Grill on each side until golden brown and check to see that the cheese is nicely melted on the inside.

Versatile sammy... I don't like rye - so used wheat bread. Didn't have purple onions so simply omitted them. Used a colby jack cheese combo. I used canned Ranch style black beans - drained, but not rinsed. Very satisfying sammy overall. Will be making this again since I enjoy black beans and am looking for other sources of proteins besides meats. The black beans add an 'umph' to the grilled cheese experience.

    I would never have thought that the rye bread would go together with the other ingredients! But I think that the rye flavor was my favorite part! It worked fabulously with the monterrey jack cheese, black beans, and red onions. Next time I am going to add some cilantro, and probably smash my beans a little so they don't try and "escape" from my sandwich! When I picked this recipe, I planned on making it for lunch one day. But I had it for dinner tonight, and it is a totally satisfying dinner! Made for my PAC baby Fall 2009. Thanks for posting a yummy sandwich! Tell Babs thank you.

    Made & reviewed for my PAC baby! OK, this is a ridiculous sandwich - ridiculously GOOD that is! I made the first one as directed, which was very tasty. I then mixed a little vinegar, salt, olive oil & cayenne into the beans & marinated them for 15 mins before making the next sandwiches. This time they blew me away! I tried this last week & have made it 3 times since - I'm addicted now. Thanks so much Peggy for a killer sandwich

    It's bad, it's bad you know it! YUUMMMY! I made this with light Jewish rye and margarine. I baked it in the oven at 450F, 5min for the 1st side then turned over for another 4min. PERFECT! It has a wonderful mix of flavors and is heartier than a regular grilled cheese sandwich so it's more filling. This is a KEEPER for me as I'm trying to cut down on eating meat and this satisfies a sandwich craving. Made for the Holiday tag game.
