These are like taking a little bite of summer. The flavors blend so well and taste great. They never stand a chance at picnics or potlucks. They always are gone before the meal begins. Quantities and ingredients may be adapted to suit your personal tastes.

24 -30 tomato treats (change servings and units)

Ingredients

Directions

    Cut slice off tops of tomatoes.
  2. 2
    Use a small (1/4 tsp) metal measuring spoon to scoop out pulp and discard.
  3. 3
    Invert tomatoes on paper towels to drain.
  4. 4
    Combine remaining ingredients.
  5. 5
    Spoon mixture into tomatoes.
  6. 6
    Refrigetate several hours.
  7. 7
    Watch them disappear.

I made these for a church function today and they went fast!! I also had at least 5 people ask me for the recipe, so I'd say it was a hit! I did wind up using a bit more mayo and I would also add it is important for your bacon to be cooked very crisp. They take a while to make since you have a lot of labor to prep the tomatoes, but I think it was worth it! Thanks Guava Girl for the great recipe!!

    Amazing! I used the slightly larger Campari tomatoes ripened on the vine, and the flavor was OUTSTANDING! Got 21 with the larger tomato, but only filling until flush with the top, and then placing the "caps" on top. Served on a blue plate for a festive Fourth of July appetizer at our BBQ. Thank you - we'll DEFINITELY be making these again, if our hearts survive!

    I had such a hard time finding cherry tomatos I went to 3 grocery stores! Guess that is something to add to my garden next year. Anyway I served these for a party and they were gone in a an instant. I actually only tasted one. I thought they were really good and I used shredded cheddar in the recipe. Also I added a tiny bit of kosher salt to the tomatos to keep them firm before adding the stuffing. I made the mixture the night before and stuffed a couple of hours before the party. I thought this was an easy to make recipe. I did serve them in the summer so I do think that would make a difference in the quality of this recipe.

    I made these at New Year and should have tripled it, the vanished so quickly. I will make these often all through the year, I know.
