BBQ Quesadillas

I just love quesadillas and make mine in a quesadilla maker. This calls for using the oven.

SERVES 16 (change servings and units)

Ingredients

Directions

  1. 1
    Preheat oven to 425 degrees.
  2. 2
    Place sliced chicken strips in a bowl and add bbq sauce, tossing gently.
  3. 3
    Place 4 tortillas on a cookie sheet and divide chicken mixture evenly over the 4 tortillas.
  4. 4
    Top each with an equal amount of pepper and onion.
  5. 5
    Place shredded cheese evenly over pepper and onion.
  6. 6
    Top each with a 2nd tortilla.
  7. 7
    Lightly spray each tortilla with a small amount of vegetable oil spray.
  8. 8
    Bake 8-10 minutes or until tops are lightly browned.
  9. 9
    Cool 10 minutes.

    Cut into wedges with pizza cutter.

Tasty! My husband and I really enjoyed these. I might have used a little more onion and green pepper than called for...I just eyeballed everything and didn't measure. I cut into mine too soon — didn't wait the full 10 minutes because i'm impatient and they looked so good! They oozed and were messier to eat than they would have been if I left it alone for the full 10 minutes...oh well! Thanks for posting this yummy recipe. Made for Zaar Stars Tag Game.

    These are quick easy and delicious!!! I just used a whole BBQ chook from the store and tore the meat up, which made it even easier to prepare. I loved the BBQ sauce with this it tasted soooo gooood. I served ours with salsa, guacamole and sour cream and they enjoyed by all.. Our family loves quesadillas and this one is a great recipe when you want to to whip up something in hurry that tastes great. Cheers CoffeeB

    This was a great choice for a quick dinner. I liked the fact that they were made in the oven. I also added in some sliced black olives and sliced jalapeno. I sauteed the onion and peppers before spreading them over the chicken. Thanks for posting!

    These quesadillas were really good and really easy! I left out the onions (personal pref) and used cheddar-jack cheese. I love a recipe like this that can be put together quickly with ingredients I always have on hand - thanks for posting!
