BBQ Chicken Pizza

My hubby and I came up with this recipe one summer. We've even won a BBQ contest with this recipe and were on our local television morning show.

SERVES 2 , 2 individual pizzas (change servings and units)

Ingredients

Directions

    Turn on BBQ to med-high to preheat.
  2. 2
    BBQ chicken breasts on medium heat until tender and juicy.
  3. 3
    Baste chicken with BBQ sauce.
  4. 4
    When chicken is cooked, slice into thin strips.
  5. 5
    Next fry onions with a little butter until caramelized.
  6. 6
    Now, assemble your pizzas.
  7. 7
    Spread a layer of the BBQ sauce on the shells.
  8. 8
    Then add a layer of sliced tomatoes.
  9. 9
    Next add the sliced chicken, then onions, and top off with the feta.
  10. 10
    On low heat put shells directly on BBQ rack.
  11. 11
    Cook until crispy, hot, and feta is soft.
  12. 12
    Enjoy.

    This was excellent, really good - really simiple - loved the feta. I also added a monterey jack cheese blend (we love cheese!) and left out the tomato as it didn't seem to fit for us. We used Sweet Baby Ray's BBQ sauce. Thanks Kareybear!
