2 (10 ounce) packages frozen chopped spinach

I have made this for the Christmas crowd, and it serves 15 very well — what with everything else on the buffet !! I found it to be tasty enough, with SOME pleasant crunch from the french-fried onions, but between the 2 packages of cream cheese and 2 cans of mushroom soup, thought it was somewhat cloying. "IF" I made it again, may try with reduced fat cheese, but this really needs something to lighten up the gloppy texture. There are other spinach casseroles for crowds that I suggest exploring, first.
