Awesome Spinach Casserole

My family were never big on eating spinach until I made this recipe. Now they always ask for more. This can also be served on crackers or french bread as an appetizer. Try it . . you'll like it.

SERVES 6 (change servings and units)

Ingredients

Directions

    Cook the spinach according to directions and drain well.
  2. 2
    Saute onion in margarine.
  3. 3
    Add the soup and cream cheese.
  4. 4
    Heat under low heat until the cheese is melted.
  5. 5
    Mix together with the spinach.
  6. 6
    Add 1/2 can of onion rings and mix well.
  7. 7
    Turn into greased casserole.
  8. 8
    Top with remainder of onion rings and bake at 350 for 30-35 minutes.

I have made this for the Christmas crowd, and it serves 15 very well — what with everything else on the buffet !! I found it to be tasty enough, with SOME pleasant crunch from the french-fried onions, but between the 2 packages of cream cheese and 2 cans of mushroom soup, thought it was somewhat cloying. "IF" I made it again, may try with reduced fat cheese, but this really needs something to lighten up the gloppy texture. There are other spinach casseroles for crowds that I suggest exploring, first. Janey
