Awesome Black Bean Corn Southwest Salad

Spicy & hearty, this salad is a crowd pleaser. It can be made several hours ahead of time making it a practical picnic or pot luck salad. Enjoy!

SERVES 8 -10 (change servings and units)

    Rinse the beans and corn & set aside to drain. Seed and dice the cucumber, finely slice the scallions and the celery. Dice the red bell pepper. Seed and finely mince the jalepeno pepper. Mince the garlic, chop the cilatro. Combine the vegetables, beans and corn and toss lightly.

    Zest and juice the lime and add to the salad along with the vegetable oil and toss to coat. Season to taste with salt and pepper.
