Awesome Apple and Cinnamon Pancakes

We have these often at our house for Sunday brunch, there a real favorite and they turn out so fluffy!

SERVES 4 (change servings and units)

Ingredients

Directions

    In a bowl, mix first 4 ingredients.
  2. 2
    In another bowl, whisk together the remaining ingredients, except the oil.
  3. 3
    Stir the egg/apple mixture into the dry ingredients; mix well, until smooth.

    Warm a skillet.
  5. 5
    When skillet is hot, add approx 1/4 cup batter.
  6. 6
    Cook until pancake until golden (approx 3 minutes on each side).

I used a bit more of apple juice and added a little bit of milk cause it was too thick. My BF and baby ate them with maple syrup. But I ate them alone with whipped cream and a bit of cinnamon. Thanks Kit Made for Zaar Star Game.

    I gave these 4 stars. Oh these are great served with Pure Maple Syrup. Eating them without I think the pancakes needed more cinnamon as there was a faint taste of cinnamon but when I drizzled on the Pure Maple Syrup the cinnamon stood out. I mixed my batter with my hand mixer. The batter seemed thin when being beat and I was worried about then being to thin but when I put them on my Hamilton Beach griddle they came of perfect. Not to thick and not thin just the way a pancake so be. I made 3 batches of pancake batter then made my pancakes and have plenty in my freezer to last for a while. Thanks for posting a yummy recipe.     Mmm these were great, hardly needed syrup. I didnt have apple juice so substituted with orange, and we all adored them. Thanks!

    Made these for breakfast and they were a nice change from our normal pancakes. We loved the apple and cinnamon flavor, very tasty! I doubled the batch to have some to freeze for school day breakfasts. Thanks for sharing this great recipe!!
