Aunt Geneva's Fudge

Recipe #143550 | 15 min | 15 min prep | add private note

My aunt's fudge recipe is my very favorite. It's got a richer cocoa flavor than most fudge, and it doesn't require a candy thermometer.

SERVES 15 (change servings and units)

Ingredients

Directions

  1. 1
Mix sugar, cocoa, milk, and butter in heavy saucepan.
  2. 2
Bring to boil and boil for 5 minutes--no need to stir.
  3. 3
Set pan in cold water and stir in nuts. Keep stirring by hand till it gets glossy and starts to stiffen up (this is the tricky part--knowing when to quit stirring!), then quickly spoon out onto wax paper into tablespoon-sized pieces.
  4. 4
NOTE: If you are in doubt about when to stop stirring and start spooning, go ahead and stop. Better to have a couple of pieces of soft, sticky fudge than a whole pot full of crumbly fudge!
  5. 5
I've never timed this, so the prep time is a guess. It's pretty quick, though! I'm also guessing on the yield.

I'd never made fudge this way before so I thought I would try it out. This just didn't work out for me. I followed the directions but my fudge was nothing more then a thick pudding. I am usually successful when it comes to candy making. The mixture started out glossy and I know if I had spooned it out, it would have run everywhere. I stirred until I thought my arm would fall off and it just barely got thicker. My goop didn't taste all that great to me either. I will stick with the long method, I think. These directions may need some more details. Made for The Name Game in honor of my Grandmother, 2008. Thanks for sharing.
