Aunt Freda’s Whole Wheat Zucchini Honey Bread

My great aunt's recipe from the depression-era, before they migrated from Nebraska to California. I use half white whole wheat flour and half regular whole wheat flour. It would also be good with whole wheat pastry flour. I love it because it's healthy, yet a nice treat!

SERVES 12 -18 , 1 -2 loaves (change servings and units)

Ingredients

Sift and set aside

Beat together then add to flour mixture

Blend with above mixture

  • 1 1/2 cups zucchini, grated
  • 1/2 cup nuts

Directions

    Grease two small or one large loaf pans and pour in batter.
  2. 2
    Bake at 350 for 1 hour or until brown (check at 45 minutes – mine took 50-55 minutes). Put on rack to cool.
