Aunt Bettye's Crock Pot Chicken and Dumplings

A recipe that reminds me of my favorite aunt.

SERVES 6 (change servings and units)

Ingredients

  • 1 lb chicken breast, cubed

  • 2 (10 ounce) cans cream of chicken soup
  • 1 small onion, chopped

  • 1 (10 ounce) can peas and carrots
  • 1 cup milk

  • 1 (8 count) package refrigerated biscuits
  • 1 bay leaf (optional)

Directions

  1. 1
    Put all ingredients (except biscuits) into cooker.
  2. 2
    Cook on HIGH 5 hours or LOW 8 hours.
  3. 3
    One hour before serving, cut biscuits into quarters and add to mix.
  4. 4
    Cook on HIGH 1 hour.

I made this tonight and it was delish. Even my three year-old who's been down with the flu gobbled it up. It was so nice to see her actually EAT something. I tweeked it here and there but stayed true to the oringinal recipe for the most part. YUMMY! Thanks for posting.

    I made this overnight and dropped in the biscuits this morning, and it is AMAZING! My husband loves it, I love it, 2 year old loves it, it's a hit! Will definitely save this and make again and again. Thanks for sharing!

    This was a nice change of pace. The biscuits cooked up very nicely. Granted, they aren't real dumplings- but you have a similar taste without the work. I added additional vegetables, corn, green pepper and green beans and some extra seasonings- celery seed and italian seasoning. My family really enjoyed it. Thanks.

    This was phenomenal! In fact, it was so good, that I've already made it twice this week! The only change I made was to use frozen chicken breasts. Just before I added the biscuits, I removed and chopped the chicken, then stirred it back into the crockpot. I cooked the meal on high for three hours, and then turned it down to low for three hours. After adding the biscuits, I turned it back up to high for an additional hour. My family couldn't get enough of this, and kept coming back for more! (I'm glad I doubled the recipe!) This was flavorful and filling, and the biscuits really did taste like dumplings! Great recipe, Pierce!
