Asparagus with Lemon Butter

This is a nice, simple side dish for dinner, or for brunch.

SERVES 4 (change servings and units)

Ingredients

Directions

    Heat salted water to a boil in a large saucepa.

    Add asparagus; cook just until tender, about 5 minutes, depending on size.
  3. 3
    Drain well, shaking to remove all water.
  4. 4
    Transfer to a serving bowl; lightly toss with butter, vinegar, lemon zest, and salt to taste.

    I've used this recipe twice now. Once I replaced the seasoned vinegar with fresh squeezed lemon and finely diced Chervil and parsley. Both times I added a few peeled rock shrimp during the last 3 minutes of cook time. Hmmmm good!

    These are very delicious! The asparagus is delicately flavored from the lemon, and the vinegar is not too heavy. They are simple to make and quick, too. I cooked mine for just 4 minutes, since I like my asparagus a little crisp. I served these with baked salmon and dijon vinaigrette potatoes. Thanks for the recipe!

    Excellent recipe for asparagus. The vinegar and lemon zest really complimented each other. Very quick and easy to make. I cooked for 5 minutes and served with grilled steak. Thanks for posting.
