Asian Tomato Salad

This recipe has been slightly tweaked from one by Katsuyo Kobayashi, Japan's favourite TV cooking show host and an Iron Chef winner. It is so easy to make, but to ensure plenty of flavour, use the best quality tomatoes you can get. If possible, make it ahead and refrigerate for at least an hour to let the flavours blend. This doesn't seem to keep well, so eat it the day you make it.

SERVES 4 (change servings and units)

Ingredients

  • 3-4 ripe tomatoes
  • 1/4 medium white onion
  • 1 tablespoon rice vinegar
  • 1-3 teaspoon honey (optional, I use 1 or none)
  • 1 pinch salt, be generous

Directions

    You can skip this step if you have very thin skinned tomatoes. Insert a fork into the caps of the tomatoes and plunge tomatoes in boiling water for 5-6 seconds, then immediately run cold water over them, and remove the skin.

    Core the tomatoes and slice them into thin wedges.
  3. 3
    Chop the onion finely.
  4. 4
    Make the dressing by combining the vinegar and honey.
  5. 5
    Arrange tomatoes on a plate, sprinkle with chopped onion, sprinkle with salt and drizzle over dressing.

This easy combo was delicious. I used grocery store tomatoes so can hardly wait to try it with fresh summer tomatoes & onions. I think it will be like sunshine on a plate! Thank you for sharing the recipe!

    I fully agree.....simple and of so delicious. I used a combination of red and yellow tomatoes from my garden which were sprinkled with a coarse sea salt. The combination of flavors is wonderful. The coarse salt added the finishing touch.

    Wordeful salad! A plain tomato salad is transforning to something special! I had it with baked turkey breast and it really made a difference to a low cal dinner. I marinade the salad overnight but added the salt at the last minute. That way its didn't get too soggy. Thanks for sharing! Its a keeper!

    Very tasty, fresh salad! I used a generous amount of sea salt, and I went with 2 teaspoons of honey. I'm serving this tonight with some teriyaki marinated tuna steaks. Can't wait for dinner! Thanks Peggy!
