Artichoke, Spinach & Sun-Dried Tomato Dip

Tangy & creamy, this artichoke dip boasts the colorful addition of sun-dried tomatoes. Serve with plain or multi-grain baked tortilla chips. Developed for Ready Set Cook #11 January 2008

SERVES 8 -10 (change servings and units)

    Preheat oven to 350 degrees.
  2. 2
    Grease a 2 quart baking dish with cooking spray.
  3. 3
    In large bowl combine cream cheese, mayonnaise, shallots & garlic.
  4. 4
    Stir in artichoke hearts, spinach, tomatoes & cheese.
  5. 5
    Bake uncovered for 25-30 minutes, or until the cheese that sticks out the top of the mixture begins to brown slightly.

    Serve with fresh vegetables or baked tortilla chips for dipping.

We love spinach artichoke dip and DD enjoyed the sun dried tomatoes but for me they didnt work to well. The dip itself was great and I enjoyed it a lot. Also sprinkled a bit of cheese on top and baked until bubbly and nicely browned. When cooled served with tortilla chips. Thank you Tink for a tasty snack!     Oh Yum! This was very easy to make and the results were better then the dip you get at restaurants! I threw everything into a food processor to mix it up and then tossed it in the oven. The recipe does not say to top with cheese, but then it mentioned that it is done when the cheese on top is slightly browned.... so I added more asiago to the top. Thanks Chef! Good Luck!

    This was quite delicious! I think it would be great to serve at parties, keeping it warm in one of those mini-crock pots. The flavor was really great and cheesy and with just enough saltiness to remind me of feta cheese, so pairing it with spinach turns out to be the perfect thing to do!!!     This dip was just amazing, yum! It was creamy and delicious, and the sun dried tomatoes were a great twist on the restaurant version. We served this with tortilla chips and veggies, and it was loved by everyone. Definitely making this again, thanks!
