Artichoke--Chicken Casserole

This is an easy dish, but nice enough for company. My bunko group raved about it! Serve it with a Ceasar salad and crusty bread. I got it from Meals.com - no author was listed.

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Preheat oven to 350 degrees.

    Cook chicken (any way you choose),cool and shread.
  3. 3
    Saute mushrooms and green onions in butter.
  4. 4
    Sprinkle with garlic salt.
  5. 5
    In a bowl, combine chicken, artichokes, and mushrooms/onions.
  6. 6
    In another bowl, combine wine, salt, pepper, mayonnaise, sour cream, and parmesan Cheese.
  7. 7
    Fold into the chicken mixture and sprinkle with Parmesan cheese.
  8. 8
    Place mixture into a 2 quart casserole.

    Bake for 30 minutes.

We enjoyed this recipe. I doubled the artichokes and mushrooms because I had extra and wanted to use them up. I also used light sour cream. I like the suggestion made another reviewer to add sun-dried tomatoes — I think that would compliment the other ingredients nicely and will try that next time. I used Poached Chicken to pre-cook (poach) the chicken; and the chicken was moist and juicy.

    Fantastic recipe! This was so tasty and easy to make. I wished I would have had more artichokes. I added some sun dried tomatoes for color. I might try adding some capers next time as well. Very yummy!!

    Wonderful! I've made this a couple of times and everyone has loved it. I assemble it ahead of time, and then bake it about 40-45 minutes. I've also chopped up and added a small tomato (wanted some color in it), and that was really good.

    So So So Yummy! I did not put the mushrooms in it since my gf doesn't like them. I also made it the night before and just cooked it about 15 minutes longer. I can't wait to eat the leftovers!!! Oh, I also did not shred the chicken (I left it in strips) and used a large can of artichokes. Also, I used light sour cream and mayo. YUM! Thanks PMP for a wonderful recipe.
