Armadillo Eggs (stuffed jalapenos)

Recipe #78708 | 1¼ hours | 30 min prep | add private note

These are so yummy. The cheese and bacon are a great compliment to the jalapeno flavor and reduce the heat of the peppers. This is my adaptation of an appetizer I had many years ago.

30 pieces (change servings and units)

Ingredients

  • 15 fresh jalapenos

  • 1 (8 ounce) package cream cheese
  • 2 tablespoons minced onions
  • 1/4 teaspoon garlic salt
  • thin sliced bacon

Directions

  1. 1
Slice jalapenos in half and clean out seeds (be sure to get them all or they will be hot).
  2. 2
Mix cheese, onion and garlic salt together and spoon into jalapeno halves.
  3. 3
Wrap each with 1/2 strip of bacon.
  4. 4
Place on cookie rack placed over a cookie sheet to catch the drippings.
  5. 5
Bake at 350 for about 45 minutes or until the bacon is crisp.
  6. 6
    The thin bacon wraps easier.
  7. 7
I just tuck the ends under the bottom.
  8. 8
Amazingly, these are not hot if you get all the seeds out.
  9. 9
There are never enough of them no matter how many I make because they are so popular.

These are very addictive! They are awesome. Followed the recipe exactly and wouldn't try them any other way. Thanks for posting.

We love these ! I make them about the same- instead of adding seasonings to the cheese I sprinkle the top of the bacon w/ steak seasoning ! I am going to just mix my steak season in w/ the cheese next time ! YUMMO- these are sooooo good !!!

We loved this version of stuffed Jalapenos! It's very similiar to the recipe I normally use but just takes it up a notch and clean up is so much easier! I especially liked the baking for 45 minutes over putting under the broiler. The flavours of the peppers were unfused into the cream cheese and the bacon was done perfectly. I had to keep in a further 8 to 10 minutes because my oven tends to be slow. I stuck a piece of parchment paper on the cookie sheet under the baking rack and clean up was a breeze! Thank you for sharing this!

We use to make plain old jalapenos stuffed with cream cheese and cheddar cheese until we tried this recipe. This is the best appetizer ever! The bacon and garlic really make the recipe. They are great cooked in the oven or on the grill. Everybody absolutely loves them and can't get enough of them! They take a little time to make, but are well worth it. Make sure that you make plenty because they go fast.
