Delicious for breakfast or a snack. from Becel, Heart healthy cooking.

SERVES 12 (change servings and units)

Ingredients

    Preheat oven to 375f degrees.
  2. 2
    Spray muffin tins with nonstick cooking spray.
  3. 3
    In a medium bowl, combine bran cereal and applesauce, let stand 5 minutes.

    Stir in egg, dates, brown sugar and margarine.
  5. 5
    In a large bowl, blend flour, baking soda, cinnamon and salt.
  6. 6
    Stir cereal mixture into dry ingredients until just moistened.
  7. 7
    Spoon batter into muffin cups.
  8. 8
    Bake for 25 minutes or until set and golden.
  9. 9
    Cool on rack.
  10. 10
    This can also be made into a loaf, bake for 45 min to 1 hour

Fantastic muffins! I used white flour instead of whole wheat and I also added a streusel topping, but other than that I made them as written. Really tasty and great texture. Thanks for sharing!

    These are wonderful. Lovely and light even with the whole-wheat flour. Very, very tasty and extremely easy to throw together. I made into mini muffins and got 36 from the recipe using a heaped tablespoon of the mix for each muffin. I cooked for 15 minutes. Thanks Derf for another winner
