Applesauce Cake

This recipe came from King Arthur Flour, its wonderful, the molasses really add to the rich flavor.

    In a mixing bowl, beat together the oil, eggs, molasses and applesauce till smooth.

    Add the flour, sugar, salt, baking powder, soda, cinnamon and nutmeg.

    beat till smooth.

    Pour batter into a lightly greased and floured 9x13 in baking pan.
  5. 5
    Place cake in a preheated 375 degree oven.
  6. 6
    Bake for 25 minutes or until it tests done.

    Remove and cool completely ona wire rack.
  8. 8
    Just before serving dust with powdered sugar.

Okay, nothing special. I used all applesauce. It is kinda chewy. It was simple to put together and quick to bake, but the flavor was ho-hum. I would not make again. **I want to update this to say how much BETTER the cake is a day or two later. It is much moister and tastier. I will make it again with walnuts and raisins, at the request of my husband. Thanks!!

    This was an easy quick cake. It was delicious with a dollop of homemade whipped cream. Just sweet enough to take care of the sweet tooth. I also replaced some of the oil with more applesauce.

    Easy...delicious. I decreased the oil to 1/4 cup and increased the applesauce to 1 1/4 cups..may omit the oil completely next time and use 1 1/2 cups applesauce...but WILL make it again...thanks for sharing

    This is very similar to an old family recxipie of mine. I can't share the exact recipie--it's a sworn family secret. But this one thing I will share: try it with chocolate chips stirred in!
