Last Thanksgiving we had a deep fried turkey so obviously stuffing our bird was out of the question. I hadn't planned on making stuffing at all so when my husband asked what stuffing recipe I was using I paniced. I went online about an hour before dinner was to be done and found this Rachael Ray recipe on foodnetwork.com. This was a great way to satisfy my husband's stuffing craving without a lot of time.

    Preheat oven to 375 degrees.

    Heat skillet over medium heat. Add oil and 4 tablespoons butter. When butter melts, add bay leaf, then celery, onion, and apple.

    Sprinkle the vegetables with salt, pepper, and poultry season. Cook 5 to 6 minutes to begin to soften vegetables and apples.

    Add parsley and stuffing mix or day old bread. Moisten the stuffing with chicken broth until all of the bread is soft but not wet. Remove bay leaf.

    Butter 12 muffin cups liberally with remaining butter. Use an ice cream scoop to fill and mound the stuffing in the tins.

    Bake until set and crisp on top, 10 to 15 minutes. Remove from tins and serve hot or at room temperature.

I made this recipe two years ago. It was delicious! My guests asked for the recipe and every time they come for dinner since, they ask me to make them. The individual muffin portions work out really well.
