What a refreshing salad! I used a whole bag of baby spinach and multiplied the dressing ingredients accordingly. I also added one can of drained mandarin oranges, 1/2 of a small bag of craisins, and 1 cup of cashew halves. We had guests for dinner and this salad was lauded by all! Thanks so much for a GREAT recipe.

Simple salad that is a breeze to make. My 13 yr old DS said 'I really like this dressing' AND he NEVER says that so I wouldn't dare give this one less than 5 stars!! I tripled the recipe, used torn regular spinach and used fresh lime juice - it was perfect for a quick light dinner tonight! Made for My 3-Chef's.
