Apple - Sour Cream Cake

I've been making this cake for more than 40 yrs. It was my mom's recipe, that she found in a newspaper and made often. It's quick to put together, never fails to please, and can be made with/without the apples and still be a winner. Top with ice cream, whip cream, fruit sauce or just eat plain, with a little powdered sugar. There isn't a variety of apple that I haven't used. They all worked well. I needed a place to store a treasure - Zaar is it!

SERVES 4 -6 , 1 cake (change servings and units)

    In a med. size bowl, cream the softened butter and the sugar together.

    Add the 2 well beaten eggs to the butter and sugar mixture and combine well.

    Add the Vanilla and mix in well.

    Combine the Flour, Baking Powder, Baking Soda and Salt, (I sift together) in a separate bowl.

    Starting with flour and ending with flour.

    Add 1/3rd of the flour mixture to the butter, egg mixture. Mix well.

    Add 1/2 of the sour cream and mix well.

    Add another 1/3rd of the flour mixture and mix well.

    Add the remaining sour cream. Mix well and add the remaining flour mixture. Mix well. The dough will be thick.

    Spread the dough in a greased and floured 7x11 or 9 inches sq. pan.

    Quarter, peel and slice "thin" the 2 apples.

    Place the apple slices in the dough (about 1/2 way in) Over lap the slices to make look pretty. Fill in small spaces with a smaller piece of apple. Fill the top of the dough with apple slices.

    Mix the cinnamon and sugar together. Sprinkle the cake with the cinnamon/sugar topping.

    Bake in a 350 degree oven for 45-50 min., till done Place on a rack to cool (It will rise "big time" while baking and settle down while cooling.).
