Apple Jack Breakfast Wraps

I make these when we go camping. Very hearty and filling.

SERVES 2 (change servings and units)

Ingredients

Directions

    In a bowl, mix together the first 5 ingredients; toss to coat apples evenly.

    In a large non-stick skillet, melt butter over medium heat.
  3. 3
    Add the apple mixture; cook 8 minutes, stirring occasionally, or until the apples are tender when pierced with a fork.

    Add in the milk and stir to mix.
  5. 5
    Gradually stir in the oatmeal.
  6. 6
    Lower the heat and cook 5 to 7 minutes or until all the liquid has been absorbed by the oatmeal.

    Remove skillet from the heat and add vanilla.
  8. 8
    Evenly spread the apple butter on the two tortillas, leaving a 1-inch border aroung the edge.
  9. 9
    Spoon the apple-oatmeal mixture onto the tortillas and roll-up/wrap.

The oatmeal lovers enjoyed these while the oatmeal haters were less than impressed. The filling was very good but seemed a little strange to me to be in a wrap. My wraps were very full so maybe less filling would have helped. Thanks for a healthy recipe. I will make the filling again.

    These were really good, and even satisfied the picky teen. Saylaveev mentioned them in the camping thread, so I cooked up the filling at home, and packed up the remaining ingredients. I gave the campers 2 options: preparing their wrap with apple butter (really really good) or 100% Natural Peanut Butter. The PB eaters got a higher-protien/lower carb wrap that was VERY filling.

    These are sooo yummy! They're a snap to make too! I used 8" wraps and I think I could've made 4 with those. I used microwave apple butter (rec# 122081) which is a snap to make as well. Great idea for a healthy breakfast NurseDi, thx for yet another yummy post!

    Very good, easy, and filling. I bought a package of tortillas and scaled the recipe accordingly. I left half my apples in bigger chunks and diced the rest, used skim milk, and low-sugar applebutter we put up last fall. I froze them all in large ziploc bags, and it is sooo easy to pull some out of the freezer, wrap in a paper towel and microwave for 90 seconds. My boys love these dipped in a mixture of peanut butter and maple syrup or honey. I love it becasue it is a quick breakfast, perfect for on-the-go and healthy to boot. Thanks for posting!
