This is the most popular cake thats sold here at Apple Hill during harvest time.You can omit the walnuts if you wish or you can add raisins or dried cranberries.

SERVES 12 (change servings and units)

Ingredients

Directions

  1. 1
    Combine sugar,oil,and eggs in a large bowl, stirring until well mixed.
  2. 2
    Stir in diced apples and nuts.
  3. 3
    Sift together flour, baking soda, nutmeg,cinnamon and salt, then add to bowl.
  4. 4
    Stir all ingredients together to form a batter (do not overmix).
  5. 5
    Pour into 9x13 inch greased pan.
  6. 6
    Bake one hour in a 350 degree oven.

The flavor of this cake was terrific. However, it did not look like a cake. The top was so crusty that if I tried to cut it, the crust shattered, however it tasted good. The bottom seemed more like a thick bread pudding rather than a cake, but was also delicious. Actually the 2 different textures is part of what made it taste good, so we'll make this again and see how it turns out.

    This cake had really great flavor and was super easy to put together. The only thing I would advise is not to put it in a bundt pan. It completely collapsed, but that didn't stop us from eating it with our fingers.

    Made for fall PAC 2007 Delicious! This cake goes together quickly and is full of wonderful flavor. My family loved this, of course they love my Apple Dessert recipe which this is very similar to. I used Golden Delicious apples, my preferred apple for baking. A definite keeper...thanks for sharing!
