Apple Enchiladas

A kid-friendly dish to make, and it looks and tastes good. I have even fed it to my kids for breakfast.

6 Enchiladas (change servings and units)

Ingredients

Directions

    Spoon fruit filling evenly down centers of tortillas.
  2. 2
    Sprinkle with cinnamon.
  3. 3
    Roll up, and place, seam side down, in a lightly greased baking dish.
  4. 4
    Bring butter and next 3 ingredients to a boil.
  5. 5
    Reduce heat, and simmer, stirring constantly, 3 minutes.
  6. 6
    Pour over enchiladas: let stand 30 minutes.
  7. 7
    Bake at 350 for 20 minutes.

I tried it and these are great! I made my own apple pie filling, and I made the sauce first and dipped the tortilla in it, then put the filling. The house smelled delish!! Thanks for posting.

    Made this for Cinqo de Mayo...delicious but a little sweet. I reduced the glaze by half but it was still a little sweet for us. I think it was because of the canned apple filling...I usually make own for pies from fresh apples. So its a personal preference probably.

    These should have a warning on them "sugar overload". They are rich but very good. Also, Splenda can be used in place of the sugar. In place of the apple pie filling, I used my recipe for Cracker Barrel Fried Apples Cracker Barrel Fried Apples, reducing the sauce and eliminating the cinnamon. This made a sweet ending to our Mexican themed Christmas brunch.

    This recipe was a fun one to make. My kids helped out it was so easy. Reminiscent of an apple dumpling/cobbler type dessert. It had a yummy gooey apple-cinnamon filling. The whole family enjoyed it and agreed--5-stars for flavor, ease, and fun. Thanks.
