As soon as I saw this recipe I knew that I would like it but may I say if I could give this 10 stars I would. It was wonderful. I did take a couple of liberties - I used 3/4 cup of dried cranberries and added 1/2 cup of apple jelly (I had no canned cranberries open). I pan friedthe omelette This omelette is so tasty. I really enjoyed my brunch thanks ellie2 25 Oct 09 I made thia again for Sunday brunch and I will say it again - Fabulous tasting omelet

I had some leftover cranberry sauce in the fridge & decided this was the way to use it. I scaled this down to serve one and did my filling mixture in the microwave rather than dirty another saucepan. It seemed a little strange to my tastes at first, me being used to an omelette being savoury but this was a lovely brekky which kept my "sweet tooth" happy. Thanks Ellie!
