Anzac Biscuits

These biscuits (cookies in America) are called Anzacs because they were baked by Australian women and sent to their ANZAC soldier sons/husbands serving in Europe and Middle east during WW I. It was more like 2 months before they were received back then, so they certainly do travel well! ** Please note that 1 Australian Tablespoon = 20 mls whereas in most others countries it = 15 mls. SERVES 12 , 12 -24 cookies (change servings and units)

Directions

    Mix oats, flour, sugar and coconut together.
  2. 2
    Melt syrup and butter together.
  3. 3
    Mix the bicarb with boiling water and add to butter and syrup mixture. Add this to dry ingredients.

    Place tablespoonsful of the mixture on a greased oven slide (cookie sheet). Bake at 150 - 160 C (300-325F) for 20 minutes.

Made these for a Geography fair where my son was presenting Australia. They were a big hit. Yummy, crunchy, sweet and buttery --all the good things in life . I had to use 1/2 honey and 1/2 dark corn syrup to make up for the golden syrup, couldn't find any where I live and no time to order online.

    Great recipe. Had a craving for some ANZAC biscuits and these were great. A quick note for the Yanks though - it's considered blasphemous to alter this recipe. Every one of our Veterans would have heart failure to hear that cocoa and chocolate topping were being put in ANZAC bikkies. Just leave them as is - it's the only respectful way to enjoy them.

    Yum, these were good. DB loves them. Thanks, will make it again. For variation you can add two teaspoons of cocoa powder to the dough, and top the baked and cooled bisuits with baking chocolate.
