On the southern Caribbean island of Bonaire where we lived for 7 years, this popular,delicious sauce was often served with the "catch of the day," hot rice, and fried plaintains (large cooking bananas.) Follow the recipe or be creative! A wonderful compliment for any grilled meat!

1 cup (change servings and units)

Directions

    Mix all ingredients in saucepan.

    Cook over medium heat until vegetables are tender and sauce begins to thicken.

    To stretch recipe, add more tomatoes.

    Serve with chicken, fish, or any meat of your choice, with hot rice.

    Option: Add 2 tsp barbecue sauce in place of ketchup.

A really delicious sauce, perfect over rice. I made it without the butter and it was still great; we had it over bowls of brown rice and tofu.

    This is incredibly good stuff. I used veg-friendly Worcestershire sauce, and had no tomato paste on hand, but it's still flat-out yummy. Served with baked tofu and white rice - - and I have to add that this concoction on white rice will make you want to eat an entire pot of it. Definitely a keeper!
