Ann's Crunchy Peanut Brittle

This is a must at Christmas. I like it because it is crunchy and not sticky.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

    Mix and set aside the butter and soda.
  2. 2
    In a large pan, mix and boil the sugar, water,and syrup to hardball stage (254 degrees F).
  3. 3
    Add peanuts and stir constantly until mixture turns yellow (NOT AMBER) about 5 minutes.

    Remove from heat and add butter mixture and vanilla.
  5. 5
    Pour onto greased cookie sheet.
  6. 6
    Pat into a thickness you like with the back of a spoon.
  7. 7
    Cool and break into pieces.
  8. 8
    Store in airtight container.

I've tried several peanut brittle recipes. This one is the best, hands down, nothing else comes close. I use raw pecans instead of peanuts, yummy, yummy , yummy.

    Thank you for this recipe - it was my second attempt at peanut brittle and extremely successful! I did have to cook it for about 10 minutes to reach a "yellow" color but I think that is due to my old and inconsistent stove. I used about 1 2/3 cups of lightly salted dry-roasted peanuts - next time I will use just a little more and a bit more baking soda as well, although this batch is pretty near perfect!

    This was a very easy to make and the peanut brittle is wonderful! I cannot eat the sticky stuff but this is so crunchy and does not stick to your teeth. This would be a great recipe for gifts and one that I plan on making often. Thanks for posting!

    WOW!! This was the best I've ever had. It was light, crunchy, and didn't stick to the teeth. This was my first experience making anything with a candy thermometer. It took a while, but it definitely is worth it. Thank you for such a yummy keeper, Miss Annie!
