Amish/Mennonite " Meadow" Tea for Freezing

My Mennonite grandmother's recipe for 'meadow' tea - keeps well ALL winter long! YUMMY! Enjoy!

10 -20 boxes (change servings and units)

Ingredients

  • 4 quarts water
  • 1 quart meadow mint tea, stems & leaves
  • 4-6 cups sugar

Directions

  1. 1
    Boil 4 quarts of water.
  2. 2
    Add 1 quart (packed tight) tea stems and leaves.
  3. 3
    Bring to a boil.
  4. 4
    Turn off the heat, and steep for 1/2- 1 hour, pressing tea down in water periodically.

    Remove leaves and stems.
  6. 6
    Strain through cheesecloth (or tightly-knit dish towel).
  7. 7
    Add 4-6 cups sugar.
  8. 8
    Stir until dissolved.
  9. 9
    Place in freezer boxes, cool completely and freeze.
  10. 10
    To prepare: Mix 1 concentrate plus 2-3 concentrate boxes full of water and serve!

This Is a great recipe I live In Lancaster County with the amish and this Is and old recipe used for many years...I fyou get the chance Its worth a try If you like meadow tea!

    WOw THis is a favorite of my moms she makes it for me and all the grand and great grand kids, now I can and freeze the concentrate thanks!!!!!!!!!!!!
