A friend gave me some starter and I didn't have pudding mix. I didn't have enough oats, so I used half oats and half wheat germ and also used wheat germ instead of the white sugar in the topping since we like things less sweet. In the batter, I used white whole wheat flour, and applesauce instead of the oil. It took about 20 min longer in my 8.5x4.5" loaf pan. Wasn't great right out of the oven, but we're really enjoying it the next day!

I was so happy to find an Amish bread recipe that does NOT require little packages of instant pudding! The only difficulty I had was that during baking, my topping all sank to the bottom of the pan, giving me "Amish Upside-Down Bread." It still tasted wonderful, though. Thanks!

this was very yummy. i liked that the topping was layered. The only problem was I over cooked it and it was a bit dry. I will try it again.
