This bread is very light and airy. It is due to the fact the bread is put through the rising cycles twice.

1 1/2 pound loaf (change servings and units)

Ingredients

18 tablespoons water (1 1/8 cup)
1/2 teaspoon salt
1/4 cup oil
1/4 cup sugar
2 3/4 cups bread flour
1 teaspoon yeast

Directions

Add ingredients in order given.

Select basic bread cycle. Let it go until the bread completes the 2nd rising. Then turn off the machine and restart it on basic cycle again.

Let cook as normal.

This bread is sooo good. Sometimes I take it out of the ABM and bake it in the oven. Either way it is delicious.

Maybe it was just me or my machine (I'd rather blame the equipment..:D) but, this didn't work so well. Flat, dense, and like chewing on rubber. Even so, the kids still ate it all! HA!

This was a great bread....really light and fluffy, great texture. And yummy taste. Great as toasted bread. It was really worth the effort. Will be making this white bread lots. Will either add some dried cranberries or walnuts in next time too. I think it will go very well. Really worth trying!! UPDATE: I tried this with walnuts, and they were great in the bread!! I really cannot stress enough how wonderful this bread is. IT IS WORTH THE EXTRA EFFORT.

If you've been looking for a light, fluffy, soft white bread recipe, look no further. The dough is VERY soft when it was mixing, but resist the temptation to add more flour. I stopped my machine after the first rise and restarted it for a total of three risings, not four. It turned out very fine grain, high loaf and fluffy. My picky son does not like homemade bread (where is HE from?!?!), but he did like this recipe!
