Almost Pierogies

As a young kid running the streets with my friends, I remember going to the back door of the neighborhood tavern and begging the cooks for pierogies. Nothing tasted better than those pleaded for treats. Since I can no longer do that, here's the next best thing. Hope you enjoy.

SERVES 8 -10 (change servings and units)

Ingredients

Directions

  1. 1
    Cook noodles a couple of minutes less than directed on package, you want them a little chewy.
  2. 2
    Drain and set aside.
  3. 3
    Melt butter and saute onions until light golden; add garlic if using and continue to saute 1 minute.
  4. 4
    Add onions to potatoes and mix well.
  5. 5
    Spray 13x9 inch baking dish with non-stick cooking spray.
  6. 6
    Add half of noodles.
  7. 7
    Top with potato mixture.
  8. 8
    Add cheddar cheese.
  9. 9
    Top with remaining noodles.
  10. 10
    Add American cheese.
  11. 11
    Bake at 350 for 30 to 45 minutes, until hot and bubbly.

    Serve with sour cream.

    (For those who like it, you might like to add a can of rinsed and drained sauerkraut.).

Tastes just like pierogies. Awesome comfort food. I used leftover mashed potatoes that had butter, garlic and sour cream already in them. The sauteed onions are really good in this. I used sharp cheddar in the first layer and topped it with velveeta slices. I halved the recipe and it came out great in an 8x8 pan. Hubby said it was really good as well. Will make again soon. Thanks for posting!

    Just fantastic! A dish everyone really loves. I've been asked for the recipie several times and have had requests to make it. The real key is to make sure the onions are really carmelized. It also helps to use sliced cheese for the top layer to cover all the noodles so they don't get dried out. If you like pierogies, you'll love this. My husband doesn't even like pierogies but loves this.

    I've made this on two different occasions and it's been a big hit. Several people have asked for the recipe. At the request of my daughter, I'm making it tonight. tastes just like a pierogie.
