Love this idea! I do it all the time only with the additions of red peppers, TVP and oatmeal to stretch it.

Like Tashak I do something very similar. I grate and saute my vegetables. I add a bit more - 2 cup veggies for every 1 lb ground meat. However, instead of rolled oats I soak 1 cup cracked wheat or bulgar, depending on what I have on hand, in 2 cups stock overnight then add it to about 4 lbs ground meat just as I finish browning. The wheat just blends right in. I'll have to try rolled oats sometime - do I need to soak them first? I cooked and froze about 12lbs of ground meat for my sister just after she had her first child prematurely. Apparently it was a life saver during those first very difficult months. I now do it for everyone I know with a new baby in the house.

I did this is it worked out great! I didn't do the celery, because my husband hates it, but otherwise followed the recipes. I divided it up into 5 packages and just used 1 package for every lb. of ground beef called for in a recipe. I made tacos and burritos and 2 different casseroles and it was so much easier than having to fry the meat up first! Thanks for the great time saving idea Tish.

I've done this for years, minus the peppers and celery per family preference. :o) I often also combine ground beef and turkey; it's cheaper and lower fat and nobody ever notices. I used to freeze it in 1/2 lb increments but as our family is larger now I do mostly 1 lb freezer bags with a few 1/2 lbs thrown in (for pizza topping, etc).
