All Bran Banana Bread

I made this yesterday from the recipe on the All-Bran packet. I just love this banana bread! It has a great taste and is low fat and high fibre! Perfect for morning tea or a snack. I like mine with just a little jam or peanut butter spread and served warm.

SERVES 10 (change servings and units)

Ingredients

Directions

    Preheat oven to 180 degree C.
  2. 2
    Combine dry ingredients and add egg, water, milk and banana.
  3. 3
    Mix until well combined.
  4. 4
    Spoon into a greased loaf tin.
  5. 5
    Bake in oven for 30-45 minutes or until cooked when tested.
  6. 6
    Note- the original recipe says to cook for 45 minutes but mine was done at 30 minutes, so I suggest testing at 30 minutes so it dosn't overcook.

Yummy: great texture. I added a cup of walnuts, and used 1/2 regular sugar and 1/2 splenda and skim milk. I baked it at 350 F.

    SOMETHING must be right with this recipe, because I liked it, and I don't even like banana bread! I used Fiber One, fat-free soy milk, Splenda, and two egg whites. It held up well to my messing around with it. Thanks for posting!

    I found this recipe to be ok. Like ShaGun, I made 12 muffins but i had to bake them for a lot longer than she did, 25 minutes total at 350F. I would add a lot less sugar the next time that i make it; the muffin tops were almost instantly sticky after coming out of the oven. I used the sticks version of all-bran, maybe that made a difference.

    Very easy to prepare. We travel in a motorhome that has only a combination convection/microwave oven. The convection oven baked the bread perfectly. Once when I was out of bananas, I substituted 1 C. applesauce and 1+ tsp of cinnamon. We love the bread sliced and toasted for breakfast. I made my own caster (fine) sugar from organic sugar (coarse) with my blender.
