Alexander's Spaghetti Carbonara

I found this recipe in a local "fundraiser" cookbook. Alexander's is an Italian restaurant that my husband and I eat at frequently and I have the Carbonara ofen and it is fantastic!

SERVES 1 (change servings and units)

Ingredients

Directions

    Dice 1/3 cup Prosciutto ham, add chopped onion and saute in 2 tbsp.
  2. 2
    olive oil.
  3. 3
    In the meantime, cook up a generous helping of spaghetti for one.
  4. 4
    Spice the Prosciutto and onions with the parsley, oregano and red pepper and stir fry until golden, then add the cooked spaghetti and stir fry to blend.
  5. 5
    Add a beaten egg and continue to stir.
  6. 6
    Add parmesan cheese and serve.

I loved this recipe. I haven't made Spaghetti Carbonara in a long time and it seemed similar to the one I used to make. It was just what I was looking for, tasty comfort food. Thanks for posting this one!

    Excellent and super easy! I did run short on the prosciutto so added regular bacon. I was very worried how this was going to turn out and was pleasantly surprised at how delicious this is! DH even had 2 plates of this which he never does. Thanks Denise for a great recipe!
