African Grilled Chicken Breast

A good grilled chicken recipe!

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    stir together all ingredients but chicken and then rub mixture over chicken breats and let marinate in fridge for at least 4 hours.
  2. 2
    grill chicken on pre heated grill and for about 15 minutes, or until chicken is done.

This chicken was enjoyed by all three of us. I used 1/2 lemon juice and 1/2 lime juice since that was what was available (much to my surprise, I have a lemon theif) and it turned out beautifully. I served this with steamed veggies and some simple roasted potatoes. I am adding this to my regular recipe rotation, since the boys have both asked when we get to have it again. Reviewed for PAC Spring 2008

    This was absolutely delicious. I prepared exactly as written. I served this with Zucchini Couscous, and Simple Roasted Carrots. Use a meat thermometer for best results!

    This is the one dish I have made my little girl who is 9 keeps asking me to make. She just loves it. It does have a nice zing to it. Love it grilled. I often add onion and garlic powder and have tried it with lime also.
