Omit the brown sugar unless you want your adobo to taste like Humba - a different Visayan dish. Also, Adobo bisaya is always marinated and then fried; the meat is not simmered in soy-vinegar sauce. This is what distiguishes Adobo Bisaya from the Tagalog version of Adobo. xoxoxo
