Hearty Tomato Soup with Lemon and Rosemary

How can you go wrong with croutons, cheese and garden fresh tomatoes. Great side dish. Fast and easy. I too stuck mine in the oven just until the cheese melted. It's a great way to use up your tomatoes. I'll definately be making this again.

What a discovery. My entire family raved about this dish and has requested that I make it again. We tend to prefer our croutons less crisp, so next time I will drizzle the vinegar directly on the croutons to soften them just a bit. But other than that, I would not deviate from this recipe at all. Thanks for sharing your recipe, Lainey. It is a definite "keeper"!

This was excellent and a very easy/quick appetizer. My guests on the 4th of July all raved about it. I followed some of the other reviewers suggestions and baked it in the oven at 325 degrees for about 10 minutes. The cheese melted perfectly and this allowed the croutons to stay crunchier than they would have in the microwave. I used store bought tomatos but am looking forward to going to the farmers market to pick up some fresh ones because this dish would highlight their flavor. Soooo Yummy! Thanks Lainey for sharing

One of my favourite tomato recipes! I make a version of this, but with slightly different seasonings - so I was pleased to try this out! A very nice recipe which we ate with cold meats and French bread yesterday, on a very hot afternoon! I substituted the dried basil for fresh basil, as I have some growing in the garden. Lovely thanks!FT
